While convincing my partner we that should book a week-long trip to Rome using Groupon Getaways, I used his birthday in early March as a great excuse to take a trip. Then of course I had to figure out how to make the day of his birthday in the middle of our trip special, and what better way to celebrate than learning to make pasta? We love our eating adventures and were looking forward to all the delicious food while we were in Italy.

Cows block the roads sometimes in Agra, India
My favorite kind of traffic jam.

When the ship docked in Chennai, India (which is also known by the name Madras) I wasn’t sure what to expect from this huge and diverse country other than it’s where the Taj Mahal is located. I was beginning to get used to hot, tropical weather as I’d just visited Vietnam and Cambodia’s temples including Angkor Wat.

It was a tough choice to sacrifice some of the time the ship was docked in Vietnam to visit Cambodia’s temples, but the lure of Angkor Wat was too much to resist. Especially after visiting my first of the Seven Wonders of the World, the Great Wall while in China I was eager to see another iconic site.

For the MV Explorer’s next port of call we were visiting Vietnam. The ship docked in Ho Chi Minh City/Saigon without any customs delays. Unlike previous ports though, we were given landing cards that we were required to carry with us at all times in order to get through the security between the ship and the port. While the official name of the city is Ho Chi Minh on all official documentation, many of its citizens still use Saigon interchangeably.

The second port on my Semester at Sea voyage was Japan, which was also the first international port. Having only traveled out of North America for my family’s trip to Ireland, I was both really excited and really nervous to land on the shores of a new country and continent. We had five days exploring Japan, an island nation and cultural titan. Since I wrote so much about this country, I’ve broken it up into a couple parts.

Despite having lived in New York State for the first 29 years of my life (excluding when I studied abroad and my internship in the Florida Keys), I had never visited the New York State Fair. Shameful, I know. However,  I finally righted this great wrong in my life, and dragged my bestie along with me. Continue reading

My family has Irish roots so from a young age I developed a deep love for all things Irish: music, dancing, food, traditions, etc. My sisters and I grew up Irish step dancing (yes, that’s the style of dance made famous by Riverdance) which meant St. Patrick’s Day was often a bigger deal in our house than Christmas. Despite having retired my ghillies and hard shoes years ago, at the first strains of a jig or reel, I still get a flutter in my heart and a twitch in my toes.
